Toss And Bake Baklava Chicken Wings

INGREDIENTS

  • 2 tbsp coriander seeds, toasted
  • 1 tbsp cumin seeds, toasted
  • 1/4 tsp ground cinnamon
  • 2 tbsp olive oil
  • Finely grated zest and juice of 1 lemon, plus lemon wedges to serve
  • 6 garlic cloves, bruised
  • 1/2 cup (175g) honey
  • 2.5kg chicken winglets (wings with tips removed, halved at the knuckle)
  • 2/3 cup (110g) smoked almonds
  • 2/3 cup (110g) shelled pistachios
  • 1/3 cup (40g) walnuts

METHOD

  1. Preheat the oven to 220°C. Grease 2 large baking trays and line them with baking paper.
  2. Crush spices using a mortar and pestle. Transfer to a bowl with oil, lemon zest, juice, garlic, and honey. Add chicken and toss to coat.
  3. Transfer to prepared trays and bake for 30 minutes. Reduce heat to 200°C and bake for a further 30 minutes or until chicken is golden and sticky.
  4. Whiz nuts in a food processor until finely chopped. Scatter over chicken for the last 10 minutes of cooking or until roasted.
